Hi Club Members:
Arlene, myself and all the Fleet Feet Sports staff hope this newsletter edition finds you well. I f you are new to our club and are reading this newsletter for the first time, welcome! Before I get started here I would like to say thank you to Barbara Gillen. Many of you have worked with Barbara when visiting the store. Barbara has the additional responsibility of producing this newsletter and month after month devotes an enormous amount of time and energy producing the text we hope you all find interesting and valuable. Thank you Barbara for all you do every day!
May was another busy month, high school track and field was in full swing producing some of the finest results in the entire country! Our own Justin Wager (Guilderland 06) running for Cortland won both the 800 and 1500 meter SUNYAC championships giving him a total of 5 wins from XC, indoor and outdoor. David Jones (Burnt Hills 04) had a very successful campaign for Sacred Heart in Connecticut.
As we move through June please be aware of the increasing temperature. Hydration is so important this time of year, there is no substitute for a nice cold glass of - - water.
Our No Boundaries team is making incredible progress. We are making our final preparation for our trip to Utica to run the Boilermaker 5K, we may have bus seats available, we will blast an announcement as soon as we have an exact count.
As always we sincerely thank you for your support , you continue to gives us opportunities to participate in some of the very necessary causes in our community! Best wishes from all of us for a healthy, active June, if you have a new graduate in your family, extra special props for all the hard work.

Athletes’ Kitchen
Get the grill out! Fresh spring vegetables and chicken marinated in a tangy/sweet citrus marinade make delicious and easy Grilled Chicken Kabobs. Use any variety of fresh vegetables available at your local farmers’ market and substitute beef, seafood, or tempeh for the chicken, if desired.
Grilled Chicken Kabobs
Marinade:
1 ½ cups orange juice
1 cup olive oil
½ cup lime juice (4-5 limes)
1/3 cup soy sauce
4 cloves garlic, crushed
2 tsps. honey
2 tsps ground cumin
2 tsps. ground black pepper
In a large bowl, whisk together all ingredients until well blended. Set aside.
Kabobs:
24 skewers (10-12” long)
2 lbs. assorted vegetables, cut into 1” pieces (zucchini, yellow squash, red and green bell peppers, red onion, cherry tomatoes, mushrooms, etc.)\
2 lbs. boneless, skinless chicken breast, cut into 1” pieces
Use heavy duty zip-loc bags for marinating. Place veggies into one or two bags. Marinate all protein selections in separate bags. Divide marinade equally along the bags, seal, and marinate in the refrigerator for about 3 hours, turning occasionally.
If using wooden skewers, soak in water to cover for at least one hour. Skewer all vegetable and protein choices on individual skewers. Since meat and vegetables cook at varying times, this will allow you to cook individual skewers until the items are sufficiently done. Discard marinade. Grill until just cooked through and slightly charred, turning often, about 8-10 minutes. |
